The Chamayrac family has never stopped studying, learning and training in order to perfect its practices, both in the vineyard and in the winery. This know-how and mastery of the wines of La Clape and the Languedoc have been passed on and enriched with each generation.

BÂTONNAGE
An operation that consists of putting the fine lees of a wine back into suspension during ageing, to nourish it and add richness and volume.

A constantly evolving tool
Successive extensions to the historic winery have given us a concrete vat cellar for vinification, blending and ageing of the red wines.
A stainless-steel vat cellar for vinification and ageing of the white and rosé wines, as well as storage and preparation of the wines before bottling.
And finally a semi-buried barrel cellar with a capacity of 80 barrels.

The genesis of a grand cru
All our grapes are machine-harvested and sorted directly in the vineyard.
When they arrive at the winery, they are cooled using a tubular exchanger in which water at negative temperature circulates, enabling us to preserve all the freshness and aromatic potential of the grapes.

The white and rosé juices are pneumatically pressed and vinified at very low temperature. Once the vinification process is complete, the wine is matured on its lees for 2 to 4 months, depending on the cuvée. This gives the wine great balance, smoothness and volume.
We use gentle extraction methods
The use of a R'Pulse® device allows us to gently and rapidly homogenize the fermenting vats without mechanical trituration.
For the red wines, we aim for optimum ripeness of the grapes, which enables us to vinify using very gentle extraction methods and long vatting times, to bring out the quintessence of our terroir.

Ageing, an ode to patience
For our top-of-the-range wines, we age them in French oak barrels for 12 months, mainly in 300 to 350 litre containers, to guarantee finesse and elegance.
Our Reserve blanche cuvée is matured for over 6 months in 600-litre barrels, known as demi-muids, rigorously selected from the world's most renowned cooperages.

Blending, or the art of expressing a terroir through the senses
As the high point of winemaking and wine ageing, blending is a crucial stage in the construction of a winemaker's cuvées. At Château Mire l'Etang, this art is practised as a family and in a collegial manner.
After vinifying each grape variety separately, we strive to make our cuvées in keeping with and representative of our terroir, while allowing our style to express itself: intense, precise, fresh, rich and balanced wines.

Product of family know-how
The recognition of La Clape wines as a cru - the highest level of appellation in the Languedoc - in 2015 was a real consecration for the thirty or so winegrowers based on the massif. This award is a guarantee of quality for consumers, who will find in the wines of La Clape a typicity and identity that are unique to this exceptional terroir. Very involved in the life of our appellation, we are proud to represent our terroir in France and abroad.
Our red wines
Our red wines are distinguished by their aromas of ripe fruit, spices and, above all, notes of aromatic scrubland plants. On the palate, they are both fresh and rich, with dense, mellow tannins and long-lasting aromas. Grape varieties Syrah, Grenache Mourvèdre and Cinsault.

Located on the seafront slopes of the Clape massif, our white wines stand out for their incredible balance between ripe fruit and floral freshness. They are sapid on the palate, with a lovely minerality and, in the best years, hints of iodine. Grape varieties Bourboulenc, Roussanne and Grenache.

Produced in the Languedoc appellation on the La Clape terroir, we are committed to offering a wide range of rosé profiles. What they have in common is that they are intensely fruity and very fresh.
